Truffled Mashed Potatoes

Makes 10 to 12 servings
Ingredients
- 3 pounds russet potatoes, peeled and cut into 1-inch pieces
- 3 pounds red potatoes, cut into 1-inch pieces
- 4 1/2 teaspoons salt, divided
- 1 3/4 cups half-and-half
- 1/2 cup butter, melted
- 2 tablespoons minced fresh parsley
- 2 teaspoons truffle oil
Instructions
- In a large stockpot, combine all potatoes, 3 teaspoons salt, and cold water to cover by 1 inch. Bring to a boil over medium-high heat. Reduce heat, and simmer for 15 minutes or until potatoes are tender. Drain and return to pot.
- Add half-and-half, remaining 3 ingredients, and remaining 1 1/2 teaspoons salt; mash to desired consistency.
