Ingredients
  1. 3 pounds russet potatoes, peeled and cut into 1-inch pieces
  2. 3 pounds red potatoes, cut into 1-inch pieces
  3. 4 1/2 teaspoons salt, divided
  4. 1 3/4 cups half-and-half
  5. 1/2 cup butter, melted
  6. 2 tablespoons minced fresh parsley
  7. 2 teaspoons truffle oil
Instructions
  1. In a large stockpot, combine all potatoes, 3 teaspoons salt, and cold water to cover by 1 inch. Bring to a boil over medium-high heat. Reduce heat, and simmer for 15 minutes or until potatoes are tender. Drain and return to pot.
  2. Add half-and-half, remaining 3 ingredients, and remaining 1 1/2 teaspoons salt; mash to desired consistency.
