
Thai Lettuce Wraps

Makes 4 to 6 servings
Ingredients
- 1/2 cup water
- 1/2 cup garlic stir-fry sauce
- 1/4 cup creamy peanut butter
- 1 rotisserie chicken, meat shredded and skin and bones discarded
- 1 red bell pepper, thinly sliced
- 1 (8-ounce) can diced water chestnuts, drained
- 1 cup matchstick carrots
- 3/4 cup sliced green onion
- 2 heads Bibb lettuce, leaves separated
- Chopped salted peanuts
Instructions
- In a small bowl, whisk together 1/2 cup water, stir-fry sauce, and peanut butter until smooth. Divide chicken and next 4 ingredients among lettuce leaves; top with peanuts, and serve with peanut sauce.
