When you buy fresh corn, look for husks that do not have holes in them (holes are a sign of worms), and silks that aren’t dried out. If the vendor you’re buying from allows you to peel back the husks to inspect the kernels, go ahead and take a peek—but be sure you buy the corn that you shuck if it’s good quality. Don’t put it back and choose other corn, because without the husks, the corn will dry out and ruin a perfectly good vegetable.
