Strawberry Brownie Bites

Ingredients
  1. 1 (18.3-ounce) box fudge brownie mix
  2. ½ cup butter, softened
  3. ½ cup Strawberry Syrup (recipe follows)
  4. 2 cups confectioners’ sugar
  5. Halved fresh strawberries
Instructions
  1. Preheat oven to 350°. Line a 9-inch square baking pan with foil, letting excess extend over sides of pan; spray foil with cooking spray.
  2. Prepare brownie mix according to package directions, and bake in prepared pan according to package directions. Let cool completely in pan.
  3. Using excess foil as handles, remove brownie from pan. Cut brownie lengthwise into 1½-inch wide strips (you should have 6 strips). Cut strips crosswise into 1½-inch-wide pieces (you should have 36 pieces). Cut each piece in half (you should have 72 small pieces).
  4. In a medium bowl, beat butter and Strawberry Syrup with a mixer at medium speed until smooth and creamy. Add confectioners’ sugar, beating until smooth. Spread or pipe strawberry mixture onto half of brownie pieces; top with remaining brownie pieces. Spread or pipe a small dollop of strawberry mixture on top of brownie pieces, and top with strawberry halves. Serve immediately, or cover and refrigerate for up to 2 days.

Strawberry Syrup
Makes about 1½ cups

Ingredients
  1. 1 pound fresh strawberries, hulled and chopped
  2. ½ cup sugar
  3. ¼ cup water
  4. ⅛ teaspoon salt
  5. 1 teaspoon fresh lemon juice
Instructions
  1. In a medium saucepan, bring strawberries, sugar, ¼ cup water, and salt to a boil over medium heat. Reduce heat, and simmer until strawberries are just tender, about 12 minutes. Remove from heat, and let cool completely. Stir in lemon juice.
  2. Pour strawberry mixture into the container of a blender; pulse 3 times. Strain mixture through a fine-mesh sieve into a small bowl, gently pressing solids with a spatula to extract as much liquid as possible. Cover and refrigerate for up to 1 week.
