Spicy Shrimp-Stuffed Potatoes

Ingredients
- 1 tablespoon all-purpose flour
- 1 teaspoon crushed red pepper
- ¼ teaspoon salt
- 1 pound medium fresh shrimp, peeled and deveined (tails left on)
- ¼ cup butter
- ¼ cup minced green onion
- 3 cloves garlic, minced
- ¾ cup chicken broth
- ¼ cup fresh lime juice
- ¹⁄3 cup chopped fresh cilantro
- Classic Baked Potatoes (recipe follows)
Instructions
- In a large bowl, stir together flour, red pepper, and salt. Add shrimp, tossing to coat.
- In a large skillet, melt butter over medium-high heat. Add green onion and garlic; cook, stirring constantly, for 2 minutes. Add shrimp mixture, and cook for 2 minutes or just until pink. Add broth and lime juice; cook for 2 minutes or until mixture is thickened. Stir in cilantro.
- Split open Classic Baked Potatoes, and divide shrimp mixture among potatoes.
