This Shrimp Scampi gets tons of flavor from lemon, garlic, and parsley. It’s great served with a piece of crusty bread to soak up the flavorful juices.
Shrimp Scampi

Makes 6 servings
Ingredients
- 1 1/2 pounds large fresh shrimp, peeled and deveined
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 8 tablespoons butter, divided
- 1 shallot, minced
- 3 cloves garlic, minced
- 1 cup dry white wine
- 2 tablespoons fresh lemon juice
- 1/4 cup chopped fresh parsley
- 1 (16-ounce) box linguine, cooked according to package directions
- Garnish: chopped fresh parsley
Instructions
- Pat shrimp dry, and sprinkle with salt and pepper. In a large skillet, melt 1 tablespoon butter over medium-high heat. Add shrimp, and cook for 4 to 6 minutes or until shrimp are pink and firm. Remove shrimp from skillet.
- Melt 1 tablespoon butter in skillet over medium-high heat. Add shallot and garlic; cook, stirring frequently, for 5 minutes. Stir in wine and lemon juice; simmer for 8 minutes or until liquid is reduced by half. Remove from heat. Stir in parsley, shrimp, and remaining 6 tablespoons butter until melted. Toss with cooked pasta. Serve immediately; garnish with parsley, if desired.
