Roasted Oysters

Ingredients
  1. 24 fresh oysters on the half shell
  2. ½ teaspoon kosher salt
  3. ½ teaspoon ground paprika
  4. ¼ teaspoon ground red pepper
  5. ¼ cup unsalted butter
  6. 1 tablespoon red wine vinegar
  7. 3 cloves garlic, thinly sliced
  8. ½ cup panko (Japanese bread crumbs)
  9. Garnish: chopped fresh thyme, lemon wedges
Instructions
  1. Preheat oven to 400°. Line a large rimmed baking sheet with aluminum foil.
  2. Place oysters in shell on prepared pan, and sprinkle with salt and next 2 ingredients.
  3. In a small saucepan, cook butter, vinegar, and garlic over medium heat until melted. Spoon over oysters, and top with bread crumbs.
  4. Bake for 15 minutes or until oysters just pull away from sides of shell. Garnish with thyme and lemon, if desired.
