
Pecan Praline Banana Pudding

Makes 10 to 12 servings
Ingredients
- 1 cup granulated sugar
- 3/4 cup firmly packed brown sugar
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 4 1/2 cups milk
- 8 large egg yolks
- 3 tablespoons butter
- 1 teaspoon vanilla extract
- 1 (12-ounce) box plus 1 cup vanilla wafers
- 8 medium bananas, sliced
- Brown Sugar Praline (recipe follows)
- 1 (16-ounce) container frozen whipped topping, thawed
- Garnish: crumbled vanilla wafers
Instructions
- In a medium saucepan, whisk together sugars, flour, and salt. In a medium bowl, whisk together milk and egg yolks. Whisk milk mixture into sugar mixture. Cook, whisking constantly, over medium heat for 8 to 10 minutes or until mixture is very thick. Remove from heat, and whisk in butter and vanilla until melted.
- Spoon mixture into a large bowl, and cover with plastic wrap, pressing wrap directly on custard to prevent a skin from forming. Refrigerate for at least 4 hours or for up to 3 days.
- In a 13x9-inch baking dish, arrange wafers to cover bottom of pan. Top with half of bananas, half of Brown Sugar Praline, and half of cold custard; repeat layers once. Spread whipped topping onto custard, and garnish with crumbled wafers, if desired. Cover and refrigerate for up to 2 days.

Makes about 1 1/2 cups
Ingredients
- 1 1/2 cups firmly packed brown sugar
- 1/2 cup chopped pecans
- 1/2 cup unsalted butter, melted
- 3 tablespoons heavy whipping cream
- 1/8 teaspoon kosher salt
Instructions
- In a small saucepan, bring all ingredients to a boil over medium heat; cook, stirring constantly, for 4 minutes or until mixture pulls away from edges of pan. Let cool completely before using.
