Oven-Fried Parmesan Chicken

Ingredients
  1. ¼ cup yellow mustard
  2. ¼ cup olive oil, divided
  3. 2 tablespoons water
  4. 2 cups panko (Japanese bread crumbs)
  5. 1 cup grated Parmesan cheese
  6. 2 teaspoons dried Italian seasoning
  7. ½ teaspoon salt
  8. ½ teaspoon ground red pepper
  9. 2½ pounds boneless skinless chicken breasts, pounded to ¼-inch thickness
  10. 4 cups jarred marinara sauce, heated
  11. Garnish: chopped fresh parsley
Instructions
  1. Preheat oven to 400°. Line a rimmed baking sheet with aluminum foil. Place a wire rack on baking sheet; spray rack with nonstick cooking spray.
  2. In a small bowl, whisk together mustard, 2 tablespoons oil, and 2 tablespoons water. In a shallow dish, combine bread crumbs, next 4 ingredients, and remaining 2 tablespoons oil.
  3. Brush both sides of each chicken breast with mustard mixture, and dredge in bread crumb mixture, pressing gently to adhere. Place chicken on prepared rack.
  4. Bake for 20 minutes or until chicken is golden brown and cooked through. Serve with marinara sauce, and garnish with parsley, if desired.
