Make this Oven-Fried Barbecue Chicken with Wilted Slaw for a light and delicious take on barbecue. Boneless pork chops can be used instead of chicken breasts.

Oven-Fried Barbecue Chicken with Wilted Slaw
 
Makes 6 servings
Ingredients
  • 1 (6-ounce) can french-fried onions, crushed
  • ½ cup grated Parmesan cheese
  • 2 teaspoons dried parsley flakes
  • ½ teaspoon ground black pepper
  • ¼ teaspoon salt
  • ½ cup vinegar-based barbecue sauce, plus more for serving
  • 6 boneless skinless chicken breasts (about 2¼ pounds)
Instructions
  1. Preheat oven to 350°. Line a large rimmed baking sheet with aluminum foil; place a wire rack over foil, and spray with nonstick cooking spray.
  2. In a shallow dish, stir together crushed onions and next 4 ingredients. In another shallow dish, pour barbecue sauce. Dip chicken in barbecue sauce to coat, and dredge in onion mixture, gently pressing to adhere. Place chicken on prepared rack.
  3. Bake for 20 to 25 minutes or until chicken is cooked through. Serve with additional barbecue sauce, if desired.

 
Wilted Slaw
 
Makes 6 servings
Ingredients
  • 10 slices bacon, chopped
  • 3 tablespoons Champagne vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 (10-ounce) bags angel hair coleslaw
  • 1 cup sliced celery
  • 1 cup sliced green onion
Instructions
  1. In a medium skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove bacon, and let drain on paper towels. To drippings in skillet, whisk in vinegar and next 3 ingredients.
  2. In a large bowl, toss together coleslaw, celery, and green onion; add vinegar mixture and cooked bacon, tossing to coat. Serve immediately.
