Minted Lime Fruit Salad

Makes 10 to 12 servings
Ingredients
- 1/2 cup sugar
- 1/2 cup water
- 2 limes, thinly sliced
- 1 (1-ounce) package fresh mint leaves
- 4 cups cubed watermelon
- 4 cups cubed honeydew
- 4 cups cubed cantaloupe
- 4 cups cubed pineapple
- 4 cups seedless red grapes
Instructions
- In a medium saucepan, bring sugar, 1/2 cup water, and lime slices to a boil over medium-high heat; reduce heat, and simmer for 5 minutes. Add mint, and let stand for 10 minutes. Strain mixture into a small bowl, discarding solids. Cover and refrigerate for at least 2 hours.
- In a large bowl, stir together all fruit and lime syrup. Cover and refrigerate for at least 30 minutes before serving.
