Minted Lime Fruit Salad
Makes 10 to 12 servings

  1. 1/2 cup sugar
  2. 1/2 cup water
  3. 2 limes, thinly sliced
  4. 1 (1-ounce) package fresh mint leaves
  5. 4 cups cubed watermelon
  6. 4 cups cubed honeydew
  7. 4 cups cubed cantaloupe
  8. 4 cups cubed pineapple
  9. 4 cups seedless red grapes
  1. In a medium saucepan, bring sugar, 1/2 cup water, and lime slices to a boil over medium-high heat; reduce heat, and simmer for 5 minutes. Add mint, and let stand for 10 minutes. Strain mixture into a small bowl, discarding solids. Cover and refrigerate for at least 2 hours.
  2. In a large bowl, stir together all fruit and lime syrup. Cover and refrigerate for at least 30 minutes before serving.
