
Layered Greek Shrimp Salad

Makes 8 to 10 servings
Ingredients
- 1 cup peeled, seeded, and chopped English cucumber
- 1 cup plain Greek yogurt
- ½ cup mayonnaise
- 1 tablespoon minced fresh dill
- 1 tablespoon fresh lemon juice
- 1 (10-ounce) bag hearts of romaine lettuce, chopped
- 1 (15-ounce) can artichoke hearts, drained well and quartered
- 1 (5.75-ounce) can jumbo pitted black olives, drained well and quartered
- 1 cup thinly sliced pepperoncini peppers
- 2 tomatoes, seeded and chopped
- ¾ cup deli sliced sweet cherry peppers
- ½ small red onion, thinly sliced
- 1 (10-ounce) bag frozen salad shrimp, thawed and patted dry
- 1½ teaspoons dried Greek seasoning
- ¾ cup crumbled feta cheese
Instructions
- In a small bowl, stir together cucumber and next 4 ingredients. Cover and refrigerate.
- In a large serving bowl or platter, layer lettuce and next 6 ingredients. Top with cucumber mixture, Greek seasoning, shrimp, and feta. Serve immediately.
