Kale Salad with Orange Vinaigrette

  1. 1 head fresh kale, stems removed and leaves chopped
  2. 6 oranges, peeled and sectioned
  3. 1½ cups dried cranberries
  4. 1 cup orange juice
  5. ¼ cup Champagne vinegar
  6. 1 shallot, chopped
  7. 2 tablespoons Dijon mustard
  8. 2 tablespoons honey
  9. ½ teaspoon salt
  10. ¼ teaspoon ground black pepper
  11. ½ cup extra-light olive oil
  12. ½ cup chopped toasted walnuts
  13. 1 (4-ounce) package crumbled goat cheese
  1. In a large bowl, combine kale, oranges, and cranberries.
  2. To the container of a blender, add orange juice and next 6 ingredients; process until blended. With blender running, add oil in a slow, steady stream until combined. Drizzle orange vinaigrette over kale mixture, tossing to combine. Let stand for 15 minutes, stirring occasionally. Top with walnuts and goat cheese before serving.
