STEP 1: Place eggs in a saucepan, and add cold water to cover. Bring to a boil over medium-high heat.
STEP 2: Once boiling, immediately cover saucepan, and turn off heat. Let stand for 17 to 20 minutes (less time for small eggs, more time for large eggs).
STEP 3: Transfer eggs to ice water, and let cool before peeling.
