Serve up this Halloween Salad with Green Goblin Dressing at a ladies’ Halloween party.
Halloween Salad with Green Goblin Dressing

Makes 8 to 10 servings
Dressing
- 1 cup packed fresh spinach
- 1 cup sour cream
- ¼ cup mayonnaise
- 2 tablespoons chopped fresh dill
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped green onion
- 1 tablespoon red wine vinegar
- 1 teaspoon minced garlic
- ¼ teaspoon salt
- ¼ teaspoon ground black pepper
Salad
- ¼ cup crumbled feta cheese
- ½ (6-ounce) can pitted large black olives, drained
- 2 (5-ounce) packages spring lettuce mix
- ½ (15-ounce) jar sliced beets, drained and chopped
- 1 large carrot, shaved into ribbons
Instructions
- For dressing: In the work bowl of a food processor, combine all ingredients, and process until smooth. Cover and refrigerate for at least 2 hours before serving.
- For salad: Stuff cheese into olives. In a large bowl, toss together stuffed olives, lettuce, beets, and carrot. Drizzle with dressing just before serving.
Notes
- Dressing can be prepared and olives can be stuffed with cheese up to 2 days in advance.
