Halloween Salad with Green Goblin Dressing

Dressing
  1. 1 cup packed fresh spinach
  2. 1 cup sour cream
  3. ¼ cup mayonnaise
  4. 2 tablespoons chopped fresh dill
  5. 2 tablespoons chopped fresh parsley
  6. 2 tablespoons chopped green onion
  7. 1 tablespoon red wine vinegar
  8. 1 teaspoon minced garlic
  9. ¼ teaspoon salt
  10. ¼ teaspoon ground black pepper
Salad
  1. ¼ cup crumbled feta cheese
  2. ½ (6-ounce) can pitted large black olives, drained
  3. 2 (5-ounce) packages spring lettuce mix
  4. ½ (15-ounce) jar sliced beets, drained and chopped
  5. 1 large carrot, shaved into ribbons
Instructions
  1. For dressing: In the work bowl of a food processor, combine all ingredients, and process until smooth. Cover and refrigerate for at least 2 hours before serving.
  2. For salad: Stuff cheese into olives. In a large bowl, toss together stuffed olives, lettuce, beets, and carrot. Drizzle with dressing just before serving.
Notes
  1. Dressing can be prepared and olives can be stuffed with cheese up to 2 days in advance.
