Fried Chicken Salad

Makes 4 servings
Ingredients
- ¼ cup extra-virgin olive oil
- ¼ cup honey
- ¼ cup Dijon mustard
- 1 teaspoon white wine vinegar
- ¼ teaspoon garlic powder
- ¼ teaspoon ground black pepper
- 1 large head red leaf lettuce, torn
- 1 pint grape tomatoes, halved
- 4 tricolor mini sweet peppers, seeded and thinly sliced
- ½ cup thinly sliced celery
- 8 deli fried chicken tenders
Instructions
- In a small bowl, whisk together olive oil and next 5 ingredients. Cover and refrigerate for up to 5 days.
- Divide lettuce and next 3 ingredients among 4 serving plates. Top each with 2 chicken tenders, and drizzle with mustard mixture.
