Ingredients
  1. ¼ cup extra-virgin olive oil
  2. ¼ cup honey
  3. ¼ cup Dijon mustard
  4. 1 teaspoon white wine vinegar
  5. ¼ teaspoon garlic powder
  6. ¼ teaspoon ground black pepper
  7. 1 large head red leaf lettuce, torn
  8. 1 pint grape tomatoes, halved
  9. 4 tricolor mini sweet peppers, seeded and thinly sliced
  10. ½ cup thinly sliced celery
  11. 8 deli fried chicken tenders
Instructions
  1. In a small bowl, whisk together olive oil and next 5 ingredients. Cover and refrigerate for up to 5 days.
  2. Divide lettuce and next 3 ingredients among 4 serving plates. Top each with 2 chicken tenders, and drizzle with mustard mixture.
