Three-Cheese Sauce
Makes about 2½ cups
  • 2 tablespoons unsalted butter
  • 1⁄4 cup all-purpose flour
  • 2 cupsmilk
  • 2 tablespoons shredded
  • Parmesan cheese
  • 2 tablespoons shredded Gruyere cheese
  • 2 tablespoons shredded Swiss cheese
  • 1⁄8 teaspoon ground white pepper
  • Pinch ground nutmeg
  1. In a small saucepan, melt butter over medium heat. Whisk in flour, and cook, whisking constantly, for 2 minutes. Gradually whisk in milk until smooth, and bring to a boil. Reduce heat, and simmer until thickened, 3 to 5 minutes. Remove from heat, and whisk in all remaining ingredients until melted and smooth.
