Pimiento Cheese
Makes about 3 cups
  • 2 (8-ounce) packages extra-sharp Cheddar cheese, shredded
  • ½ cup mayonnaise
  • 1 (4-ounce) jar diced pimientos, drained
  • 1 teaspoon Dijon mustard
  • ½ teaspoon smoked paprika
  1. In a medium bowl, combine cheese, mayonnaise, pimientos, mustard, and paprika. Beat at medium speed with a mixer until combined. Cover and chill up to 3 days.
