  2. 1 cup coconut milk
  3. ¾ cup uncooked Arborio or medium-grain rice
  4. ⅔ cup sugar
  5. ¼ teaspoon salt
  6. ½ cup dried cherries
  7. ¼ teaspoon almond extract
  1. In a large saucepan, combine milk, coconut milk, rice, sugar, and salt. Bring to a boil, reduce heat, and simmer, stirring often, for 30 minutes or until rice is tender. Stir in dried cherries and almond extract. Pour into 4 small bowls.
