- 3 cups milk
- 1 cup coconut milk
- ¾ cup uncooked Arborio or medium-grain rice
- ⅔ cup sugar
- ¼ teaspoon salt
- ½ cup dried cherries
- ¼ teaspoon almond extract
- In a large saucepan, combine milk, coconut milk, rice, sugar, and salt. Bring to a boil, reduce heat, and simmer, stirring often, for 30 minutes or until rice is tender. Stir in dried cherries and almond extract. Pour into 4 small bowls.
