Colcannon

Colcannon is a traditional Irish recipe that combines mashed potatoes with cabbage or another leafy green. This dish is a modern version that uses angel hair coleslaw and green onions.

Ingredients
  1. 3 pounds russet potatoes, peeled and quartered
  2. ½ cup unsalted butter
  3. 1 (10-ounce) package angel hair coleslaw
  4. 1 cup whole milk
  5. ½ cup heavy whipping cream
  6. 1 bunch green onions, finely sliced
  7. 2 teaspoons kosher salt
  8. 1 teaspoon ground black pepper
Instructions
  1. In a large Dutch oven, bring potatoes and water to cover to a boil over high heat; reduce heat, and simmer for 15 minutes or until tender. Drain well.
  2. In same Dutch oven, melt butter over medium-high heat. Add coleslaw, and cook for 3 minutes, stirring occasionally, until wilted. Add milk, cream, and green onion; bring to a boil. Remove from heat; add potatoes. Using a potato masher, mash potatoes until mixture is smooth. Stir in salt and pepper. Serve immediately.
