Colcannon is a traditional Irish recipe that combines mashed potatoes with cabbage or another leafy green. This dish is a modern version that uses angel hair coleslaw and green onions.

Makes 6 to 8 servings
Ingredients
- 3 pounds russet potatoes, peeled and quartered
- ½ cup unsalted butter
- 1 (10-ounce) package angel hair coleslaw
- 1 cup whole milk
- ½ cup heavy whipping cream
- 1 bunch green onions, finely sliced
- 2 teaspoons kosher salt
- 1 teaspoon ground black pepper
Instructions
- In a large Dutch oven, bring potatoes and water to cover to a boil over high heat; reduce heat, and simmer for 15 minutes or until tender. Drain well.
- In same Dutch oven, melt butter over medium-high heat. Add coleslaw, and cook for 3 minutes, stirring occasionally, until wilted. Add milk, cream, and green onion; bring to a boil. Remove from heat; add potatoes. Using a potato masher, mash potatoes until mixture is smooth. Stir in salt and pepper. Serve immediately.
