Chutney Chicken Salad

Makes 6½ cups
Ingredients
- 1 (9-ounce) jar Major Grey’s chutney
- ⅔ cup plain Greek yogurt
- ½ teaspoon salt
- ½ teaspoon curry powder
- 3 cups chopped cooked chicken
- 1 Granny Smith apple, cored and chopped
- ⅔ cup raisins
- ⅔ cup chopped toasted walnuts
- ¼ cup chopped green onion
- Whole wheat sandwich bread
- Green leaf lettuce
Instructions
- In a large bowl, stir together chutney and next 3 ingredients. Add chicken and next 4 ingredients, stirring to combine. Cover and refrigerate up to 3 days. Serve on bread with lettuce, if desired.
