Ingredients
  1. 2 heads romaine lettuce, finely shredded
  2. 2 ripe tomatoes, seeded and chopped
  3. 1 yellow bell pepper, finely chopped
  4. 1 green bell pepper, finely chopped
  5. 1 cup finely chopped seedless cucumber
  6. 1/2 cup finely chopped black olives
  7. 1/4 cup finely chopped red onion
  8. 1/2 cup olive oil
  9. 1/3 cup Champagne vinegar
  10. 1 teaspoon whole-grain mustard
  11. 1 teaspoon honey
  12. 1/4 teaspoon salt
  13. 1/4 teaspoon ground black pepper
Instructions
  1. In a large serving bowl, toss together lettuce and next 6 ingredients.
  2. In a small bowl, whisk together oil and all remaining ingredients. Drizzle over salad just before serving, tossing gently to coat.
