Ingredients
  1. 3 tablespoons unsalted butter
  2. 1 cup sliced red bell pepper
  3. ½ cup sliced red onion
  4. 3 cloves garlic, minced
  5. 1 pound large fresh shrimp, peeled and deveined
  6. 1 pint yellow cherry tomatoes, halved
  7. 1 cup beef broth
  8. 2 teaspoons Worcestershire sauce
  9. 1½ teaspoons Cajun seasoning
  10. 1 teaspoon ground black pepper
  11. Hot cooked rice
  12. Garnish: sliced green onion
Instructions
  1. In a large skillet, melt butter over medium-high heat. Add bell pepper and onion; cook, stirring occasionally, for 4 to 5 minutes or until tender. Add garlic; cook for 1 minute.
  2. Stir in shrimp and next 5 ingredients; cook, stirring occasionally, for 5 minutes or until shrimp are pink and firm. Serve over rice, and garnish with green onion, if desired.
