Cajun Shrimp Skillet

Makes 4 to 6 servings
Ingredients
- 3 tablespoons unsalted butter
- 1 cup sliced red bell pepper
- ½ cup sliced red onion
- 3 cloves garlic, minced
- 1 pound large fresh shrimp, peeled and deveined
- 1 pint yellow cherry tomatoes, halved
- 1 cup beef broth
- 2 teaspoons Worcestershire sauce
- 1½ teaspoons Cajun seasoning
- 1 teaspoon ground black pepper
- Hot cooked rice
- Garnish: sliced green onion
Instructions
- In a large skillet, melt butter over medium-high heat. Add bell pepper and onion; cook, stirring occasionally, for 4 to 5 minutes or until tender. Add garlic; cook for 1 minute.
- Stir in shrimp and next 5 ingredients; cook, stirring occasionally, for 5 minutes or until shrimp are pink and firm. Serve over rice, and garnish with green onion, if desired.
