
Banana Nut Muffins

Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 cup mashed ripe banana
- 1/2 cup vegetable oil
- 2 large eggs
- 2 tablespoons milk
- 1 cup chopped pecans
Instructions
- Preheat oven to 400°. Spray 15 muffin cups with baking spray with flour.
- In a large bowl, whisk together flour and next 5 ingredients. In a medium bowl, whisk together banana and next 3 ingredients. Stir banana mixture into flour mixture just until combined. Stir in pecans. Spoon batter into prepared cups.
- Bake for 12 to 15 minutes or until golden brown. Let cool in pan for 5 minutes. Remove from pans, and let cool completely on wire racks.
