Apple Cobbler with Oatmeal-Ginger Topping

Ingredients
  1. 10 large Braeburn apples, peeled, cored, and chopped
  2. 3/4 cup firmly packed brown sugar
  3. 2 tablespoons all-purpose flour
  4. 1 tablespoon orange zest
  5. 1 teaspoon ground ginger
  6. 1/8 teaspoon salt
  7. 1/4 cup butter
  8. Oatmeal-Ginger Topping (recipe follows)
Instructions
  1. Preheat oven to 350˚. Spray a 2 1/2 to 3-quart baking dish with nonstick cooking spray.
  2. In a large bowl, combine chopped apples, brown sugar, flour, orange zest, ginger, and salt, tossing gently to coat.
  3. In a large skillet, melt butter over medium heat. Add apple mixture, and cook for 8 to 10 minutes, or until apples are tender. Spoon into prepared baking dish. Top evenly with Oatmeal-Ginger Topping. Bake for 30 to 40 minutes, or until topping is golden brown and apple mixture is hot and bubbly. Serve immediately.

  2. 3/4 cup quick-cooking oats
  3. 1/4 cup firmly packed brown sugar
  4. 1/2 teaspoon ground ginger
  5. 1/8 teaspoon salt
  6. 1/2 cup butter
Instructions
  1. In a medium bowl, combine flour, oats, brown sugar, ginger, and salt. Using a pastry blender, cut in butter until mixture is crumbly.
