Apple Butter Pork Chops

This one-pan meal is filled with flavor from fresh rosemary, ginger, and apples for a weeknight meal your family will love.

Apple Butter Pork Chops

Ingredients
  • 2 teaspoons olive oil
  • 4 (1-inch-thick) bone-in center-cut pork chops
  • 1½ teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 4 slices thick-cut bacon, chopped
  • 1 tablespoon unsalted butter
  • 1 Gala apple, cored and chopped
  • 1 Granny Smith apple, cored and chopped
  • ½ cup thinly sliced sweet onion
  • 2 teaspoons minced fresh rosemary
  • 1 teaspoon ground ginger
  • 1 (12-ounce) jar apple butter
  • Garnish: fresh rosemary
Instructions
  1. Preheat oven to 400°.
  2. Rub oil all over pork chops; sprinkle all over with salt and pepper. Let stand a room temperature.
  3. In a 12-inch oveproof skillet, cook bacon over medium-low heat, stirring occasionally, until crisp, about 5 minute Remove bacon using a slotted spoon, and let drain on paper towels, reserving drippings in skillet.
  4. Add pork chops to skillet; cook over medium heat until browned, 1 to 2 minutes per side. Remove from skillet.
  5. In same skillet, melt butter in skillet over medium heat. Stir in apples, onion, minced rosemary, and ginger; cook until apples are just tender, 2 to 3 minutes. Stir in apple butter. Nestle pork chops in apple mixture.
  6. Bake until an instant-read thermometer inserted in thickest portion of pork chops registers 160°, 15 to 20 minutes. Let stand for 10 minutes. Top with bacon. Garnish with rosemary, if desired.
