Step-By-Step Vegetable Prep

We used only the freshest and finest vegetables available for our tempura—Oriental sweet potatoes, pumpkin, Gobo roots, Lotus roots, carrots, eggplant, and sweet peppers. We chose veggies with flavors that pair well with Japanese spices and sauces.
