Ingredients
  1. 1/2 cup water
  2. 1/2 cup garlic stir-fry sauce
  3. 1/4 cup creamy peanut butter
  4. 1 rotisserie chicken, meat shredded and skin and bones discarded
  5. 1 red bell pepper, thinly sliced
  6. 1 (8-ounce) can diced water chestnuts, drained
  7. 1 cup matchstick carrots
  8. 3/4 cup sliced green onion
  9. 2 heads Bibb lettuce, leaves separated
  10. Chopped salted peanuts
Instructions
  1. In a small bowl, whisk together 1/2 cup water, stir-fry sauce, and peanut butter until smooth. Divide chicken and next 4 ingredients among lettuce leaves; top with peanuts, and serve with peanut sauce.
