Lady Peas with Fresh Okra

From Taste of the South, Summer 06

  1. 4 to 5 cups shelled lady peas (See note.)
  2. 1 cup water
  3. 1 cup chicken broth
  4. 4 to 6 whole fresh okra pods, stem end trimmed
  5. 2 tablespoons fresh thyme
  6. 1 teaspoon salt
  1. In a 3-quart saucepan, combine peas, water, and chicken broth. Bring to a boil over medium heat on stovetop. Add okra, thyme, and salt. Cover and reduce heat to low. Simmer for approximately 45 to 60 minutes until vegetables are tender
Makes 6 - 8 servings
Note: What are lady peas? They’re a small, delicate pea variety that is cream to pale-green in color and tends to be less starchy than their counterparts. If lady peas are not available, substitute purple-hull or crowder peas.
