Caramelized Onion and Steak Sandwiches

  1. 3 tablespoons butter
  2. 4 large sweet onions, thinly sliced
  3. 1 (1 1/2-pound) cooked flank steak, (leftover from Grilled Flank Steaks)
  4. 2 tablespoons soy sauce
  5. 1/2 teaspoon ground black pepper
  6. 1/4 teaspoon salt
  7. 6 hoagie rolls, split, buttered, and toasted
  8. 3 cups shredded Monterey Jack cheese with horseradish (Swiss cheese can be substituted)
  9. Chopped fresh parsley (optional)
  1. In a large skillet, melt butter over medium heat. Add onions, cover, and cook, 30 minutes, stirring occasionally. Uncover, increase heat to medium-high, and cook 5 to 6 minutes, stirring frequently, or until onions are caramelized. Thinly slice steak diagonally against the grain. Add steak, soy sauce, pepper, and salt, stirring to combine. Cook 3 to 4 minutes, or until heated through.
  2. Divide onion mixture evenly between hoagie rolls. Top each with 1/2 cup cheese. Broil sandwiches 5 1/2-inches from heat until cheese is melted. Garnish with chopped fresh parsley, if desired.
