Bacon Onion Oatmeal Buns

Ingredients
2 cups boiling water
1 cup quick-cooking oats
3/4 pound bacon, cut into small pieces
2 cups diced onions
3 tablespoons vegetable oil
2 packages granular yeast
1/3 cup warm water (105°F-115°F)
1/4 cup dark molasses
2/3 cup brown sugar
1 egg
2 teaspoons salt
5 1/2 to 6 1/2 cups all-purpose flour
Melted butter
Instructions
In a small bowl, pour boiling water over oatmeal and let cool completely.
Brown bacon and add onion when bacon is almost done. Drain well.
Combine yeast and warm water. Let stand 5 minutes.
Add softened yeast, oil, molasses, brown sugar, egg, and salt to oatmeal. Add bacon and onions alternately with flour to make a soft dough. Let rise 1 hour, or until doubled in bulk.
Lightly grease 3 (9-inch) baking pans.
Form dough into 3-inch rounds and arrange in prepared pans. Let rise 1 hour, or until doubled in bulk.
Bake at 375°F for 18 minutes. Brush with melted butter immediately after removing from the oven.
