Bacon Onion Oatmeal Buns

Ingredients
  1. 2 cups boiling water
  2. 1 cup quick-cooking oats
  3. 3/4 pound bacon, cut into small pieces
  4. 2 cups diced onions
  5. 3 tablespoons vegetable oil
  6. 2 packages granular yeast
  7. 1/3 cup warm water (105°F-115°F)
  8. 1/4 cup dark molasses
  9. 2/3 cup brown sugar
  10. 1 egg
  11. 2 teaspoons salt
  12. 5 1/2 to 6 1/2 cups all-purpose flour
  13. Melted butter
Instructions
  1. In a small bowl, pour boiling water over oatmeal and let cool completely.
  2. Brown bacon and add onion when bacon is almost done. Drain well.
  3. Combine yeast and warm water. Let stand 5 minutes.
  4. Add softened yeast, oil, molasses, brown sugar, egg, and salt to oatmeal. Add bacon and onions alternately with flour to make a soft dough. Let rise 1 hour, or until doubled in bulk.
  5. Lightly grease 3 (9-inch) baking pans.
  6. Form dough into 3-inch rounds and arrange in prepared pans. Let rise 1 hour, or until doubled in bulk.
  7. Bake at 375°F for 18 minutes. Brush with melted butter immediately after removing from the oven.
