Derby Bars
  1. 2 cups all-purpose flour
  2. 1/2 cup granulated sugar
  3. 1/4 teaspoon salt
  4. 3/4 cup butter, cut into tablespoons
  5. 1 cup firmly packed brown sugar
  6. 1 cup dark corn syrup
  7. 1/2 cup butter, melted
  8. 4 large eggs
  9. 2 tablespoons bourbon
  10. 2 cups chopped pecans
  11. 1 cup semisweet chocolate morsels
  1. Preheat oven to 350°. Line a 13x9-inch baking pan with foil; spray with nonstick cooking spray.
  2. In a large bowl, combine flour, granulated sugar, and salt. Using a pastry blender, cut in butter until mixture is crumbly. Press mixture firmly into bottom of prepared pan. Bake for 15 to 18 minutes or until lightly browned.
  3. In another large bowl, whisk together brown sugar and next 4 ingredients until combined. Stir in pecans and chocolate. Pour mixture over prepared crust, and bake for 30 to 40 minutes or until center is set. Let cool completely before cutting. Store in airtight containers up to 1 week.
