Philly Cheese Steak-Style Subs

Philly Cheese Steak-Style Subs
  1. 1 (8-ounce) block American cheese
  2. 1 (8-ounce) block mild Cheddar cheese
  3. 4 ounces cream cheese, softened
  4. 1/4 cup horseradish cream
  5. 1/4 cup mayonnaise
  6. 12 hoagie rolls, split
  7. 2 green bell peppers, thinly sliced
  8. 2 pounds thinly sliced roast beef
  1. Using a food processor or handheld grater, shred American and Cheddar cheese. Combine all cheeses and next 2 ingredients in the work bowl of a food processor. Process for 5 minutes, scraping sides down as needed, until mixture is smooth.
  2. Layer bottom halves of rolls with roast beef and bell pepper slices. Spread cheese mixture evenly on cut sides of remaining halves, and place, cheese side down, on top of bell peppers.
Makes 12 sandwiches
Note: These sandwiches can be made in advance and wrapped in plastic wrap for travel. Ask the deli counter to cut an 8-ounce piece of American cheese for grating.
