Fruit Salad with Lemon-Poppy Seed Dressing

Ingredients
  1. 1/2 cup fresh lemon juice
  2. 1/2 cup sugar
  3. 1/4 cup white wine vinegar
  4. 1 teaspoon Dijon mustard
  5. 1/2 teaspoon salt
  6. 1 cup vegetable oil
  7. 1 1/2 tablespoons poppy seeds
  8. 1 pineapple, peeled, cored, and cut into 2-inch cubes
  9. 1/2 cantaloupe, cut into 2-inch cubes
  10. 1/2 honeydew, cut into 2-inch cubes
  11. 2 pints fresh strawberries, hulled and quartered
  12. 1 pint fresh blueberries
  13. Garnish: fresh mint
Instructions
  1. In the container of a blender, combine lemon juice, sugar, vinegar, mustard, and salt; process until smooth.
  2. Remove center piece of blender lid. With blender running, add oil in a slow steady steam. Add poppy seeds, and process for 20 seconds. Store dressing in an airtight container in refrigerator up to 1 week.
  3. To serve, let dressing stand to room temperature; whisk until blended. In a large serving bowl, stir together fruit and dressing. Garnish with mint, if desired. Serve immediately.
