Fruit Salad with Lemon-Poppy Seed Dressing

Makes 8 to 10 servings
Ingredients
- 1/2 cup fresh lemon juice
- 1/2 cup sugar
- 1/4 cup white wine vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1 cup vegetable oil
- 1 1/2 tablespoons poppy seeds
- 1 pineapple, peeled, cored, and cut into 2-inch cubes
- 1/2 cantaloupe, cut into 2-inch cubes
- 1/2 honeydew, cut into 2-inch cubes
- 2 pints fresh strawberries, hulled and quartered
- 1 pint fresh blueberries
- Garnish: fresh mint
Instructions
- In the container of a blender, combine lemon juice, sugar, vinegar, mustard, and salt; process until smooth.
- Remove center piece of blender lid. With blender running, add oil in a slow steady steam. Add poppy seeds, and process for 20 seconds. Store dressing in an airtight container in refrigerator up to 1 week.
- To serve, let dressing stand to room temperature; whisk until blended. In a large serving bowl, stir together fruit and dressing. Garnish with mint, if desired. Serve immediately.
