Candied Sweet Potatoes

Candied Sweet Potatoes
  1. 4 large sweet potatoes, peeled and cut into 1/2-inch-thick rounds
  2. 2 tablespoons vegetable oil
  3. 1/2 cup firmly packed brown sugar
  4. 1/4 cup butter
  5. 1/4 cup light corn syrup
  6. 1/4 cup water
  1. Preheat oven to 450˚. Spray a rimmed baking sheet with nonstick cooking spray.
  2. In a large bowl, combine sweet potatoes and oil; tossing gently to coat. Arrange potatoes in a single layer on prepared baking sheet. Bake for 30 minutes.
  3. In a medium saucepan, combine brown sugar, butter, corn syrup, and 1/4 cup water. Bring to a boil over medium-high heat; reduce heat, and simmer for 8 minutes. Pour hot syrup over potatoes before serving.
