Breakfast Burritos

Breakfast Burritos
Ingredients
  1. 1 pound sirloin steak, trimmed and cut into 1/2-inch cubes
  2. 2 tablespoons taco seasoning
  3. 3 tablespoons olive oil, divided
  4. 1 green bell pepper, chopped
  5. 8 large eggs
  6. 1/2 cup shredded Cheddar cheese
  7. 1 (3-ounce) package cream cheese, softened and cut into cubes
  8. 1/2 teaspoon salt
  9. 1/4 teaspoon ground black pepper
  10. 6 (10-inch) flour tortillas
  11. 3/4 cup salsa
Instructions
  1. Preheat oven to 350°.
  2. In a medium bowl, combine steak and taco seasoning, tossing to coat.
  3. In a large skillet, heat 2 tablespoons olive oil over medium heat. Add steak, and cook for about 10 minutes, or until browned and cooked through. Remove from heat; drain, and set aside. In same skillet, heat remaining 1 tablespoon olive oil over medium heat. Add green pepper, and cook for 3 minutes, or until tender.
  4. In a large bowl, whisk eggs. Add eggs to skillet with peppers; cook, stirring frequently, until set, but not dry. Add cheeses, salt, and pepper, stirring until cheeses are melted. Gently stir in steak.
  5. To assemble, wrap tortillas in aluminum foil, and heat in oven for 5 minutes. Spread egg mixture on each tortilla. Top with 2
  6. tablespoons salsa. Wrap burrito-style. Serve immediately.
Makes 6 burritos
Note: Add a mixed green salad for a complete meal.
