Sweet Potato Casserole

Sweet Potato Casserole
Ingredients
  1. 9 cups mashed cooked sweet potatoes (about 6 large)
  2. 1 (8-ounce) container sour cream
  3. 1 (5-ounce) can evaporated milk
  4. 1/2 cup plus 2 tablespoons butter, melted and divided
  5. 1/2 cup firmly packed brown sugar
  6. 1 large egg, lightly beaten
  7. 2 teaspoons ancho chili powder
  8. 1 teaspoon ground cumin
  9. 1/2 teaspoon salt
  10. 2 cups crumbled tortilla chips
Instructions
  1. Preheat oven to 350˚. Lightly grease a 3-quart baking dish.In a large bowl, combine sweet potatoes, sour cream, milk, 1/2 cup melted butter, brown sugar, egg, chili powder, cumin, and salt. Spoon into prepared baking dish.
  2. In a small bowl, combine tortilla chips and remaining 2 tablespoons melted butter. Sprinkle evenly over sweet potato mixture. Bake for 30 minutes, or until hot and bubbly. Serve immediately.
Makes 10 - 12 servings
