Sweet Potato Casserole

9 cups mashed cooked sweet potatoes (about 6 large)
1 (8-ounce) container sour cream
1 (5-ounce) can evaporated milk
1/2 cup plus 2 tablespoons butter, melted and divided
1/2 cup firmly packed brown sugar
1 large egg, lightly beaten
2 teaspoons ancho chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
2 cups crumbled tortilla chips
Preheat oven to 350˚. Lightly grease a 3-quart baking dish.In a large bowl, combine sweet potatoes, sour cream, milk, 1/2 cup melted butter, brown sugar, egg, chili powder, cumin, and salt. Spoon into prepared baking dish.
In a small bowl, combine tortilla chips and remaining 2 tablespoons melted butter. Sprinkle evenly over sweet potato mixture. Bake for 30 minutes, or until hot and bubbly. Serve immediately.
Makes 10 - 12 servings
