Carrot and Bacon Salad

Ingredients
2 pounds carrots, coarsely grated
1 pound bacon, cooked and crumbled
1/4 cup sliced green onion
3 tablespoons sunflower seeds
2/3 cup mayonnaise
1/3 cup honey
1 tablespoon fresh lemon juice
3/4 teaspoon salt
Instructions
In a large bowl, combine carrots, bacon, green onion, and sunflower seeds.
In a small bowl, combine mayonnaise, honey, lemon juice, and salt; add to carrot mixture just before serving, tossing gently to coat.
Makes 6 - 8 servings
