Carrot and Bacon Salad
Ingredients
  1. 2 pounds carrots, coarsely grated
  2. 1 pound bacon, cooked and crumbled
  3. 1/4 cup sliced green onion
  4. 3 tablespoons sunflower seeds
  5. 2/3 cup mayonnaise
  6. 1/3 cup honey
  7. 1 tablespoon fresh lemon juice
  8. 3/4 teaspoon salt
Instructions
  1. In a large bowl, combine carrots, bacon, green onion, and sunflower seeds.
  2. In a small bowl, combine mayonnaise, honey, lemon juice, and salt; add to carrot mixture just before serving, tossing gently to coat.
Makes 6 - 8 servings
