Pecan Praline Banana Pudding

Ingredients
  1. 1 cup granulated sugar
  2. 3/4 cup firmly packed brown sugar
  3. 1/2 cup all-purpose flour
  4. 1/2 teaspoon salt
  5. 4 1/2 cups milk
  6. 8 large egg yolks
  7. 3 tablespoons butter
  8. 1 teaspoon vanilla extract
  9. 1 (12-ounce) box plus 1 cup vanilla wafers
  10. 8 medium bananas, sliced
  11. Brown Sugar Praline (recipe follows)
  12. 1 (16-ounce) container frozen whipped topping, thawed
  13. Garnish: crumbled vanilla wafers
Instructions
  1. In a medium saucepan, whisk together sugars, flour, and salt. In a medium bowl, whisk together milk and egg yolks. Whisk milk mixture into sugar mixture. Cook, whisking constantly, over medium heat for 8 to 10 minutes or until mixture is very thick. Remove from heat, and whisk in butter and vanilla until melted.
  2. Spoon mixture into a large bowl, and cover with plastic wrap, pressing wrap directly on custard to prevent a skin from forming. Refrigerate for at least 4 hours or for up to 3 days.
  3. In a 13x9-inch baking dish, arrange wafers to cover bottom of pan. Top with half of bananas, half of Brown Sugar Praline, and half of cold custard; repeat layers once. Spread whipped topping onto custard, and garnish with crumbled wafers, if desired. Cover and refrigerate for up to 2 days.

  1. 1 1/2 cups firmly packed brown sugar
  2. 1/2 cup chopped pecans
  3. 1/2 cup unsalted butter, melted
  4. 3 tablespoons heavy whipping cream
  5. 1/8 teaspoon kosher salt
Instructions
  1. In a small saucepan, bring all ingredients to a boil over medium heat; cook, stirring constantly, for 4 minutes or until mixture pulls away from edges of pan. Let cool completely before using.
