Layered Greek Shrimp Salad

Ingredients
  1. 1 cup peeled, seeded, and chopped English cucumber
  2. 1 cup plain Greek yogurt
  3. ½ cup mayonnaise
  4. 1 tablespoon minced fresh dill
  5. 1 tablespoon fresh lemon juice
  6. 1 (10-ounce) bag hearts of romaine lettuce, chopped
  7. 1 (15-ounce) can artichoke hearts, drained well and quartered
  8. 1 (5.75-ounce) can jumbo pitted black olives, drained well and quartered
  9. 1 cup thinly sliced pepperoncini peppers
  10. 2 tomatoes, seeded and chopped
  11. ¾ cup deli sliced sweet cherry peppers
  12. ½ small red onion, thinly sliced
  13. 1 (10-ounce) bag frozen salad shrimp, thawed and patted dry
  14. 1½ teaspoons dried Greek seasoning
  15. ¾ cup crumbled feta cheese
Instructions
  1. In a small bowl, stir together cucumber and next 4 ingredients. Cover and refrigerate.
  2. In a large serving bowl or platter, layer lettuce and next 6 ingredients. Top with cucumber mixture, Greek seasoning, shrimp, and feta. Serve immediately.
