Glazed baby carrots are an easy side dish to complete any meal. 

Glazed Baby Carrots

Ingredients
  1. 8 tablespoons butter, divided
  2. 1½ pounds baby carrots with tops, peeled and trimmed
  3. ½ cup apple juice
  4. ¾ cup firmly packed brown sugar
  5. 1 teaspoon salt
  6. 1 teaspoon Dijon mustard
  7. ¼ teaspoon smoked paprika
Instructions
  1. In a large Dutch oven, melt 2 tablespoons butter over medium-high heat. Add half of carrots; cook, stirring occasionally, for 3 minutes or until carrots are lightly browned. Remove from pan, and set aside. Repeat with 2 tablespoons butter and remaining carrots.
  2. Stir apple juice into pan, scraping browned bits from bottom of pan with a wooden spoon. Cook over medium heat for 6 minutes or until liquid is reduced by half. Stir in sugar, all remaining ingredients, and remaining 4 tablespoons butter. Cook, stirring constantly, until sugar dissolves and mixture is smooth.
  3. Stir carrots into sugar mixture, and bring to a boil. Reduce heat to low, and cook for 15 minutes or until carrots are tender.
