Ingredients
  1. 4 pounds russet potatoes, peeled and diced
  2. 4 teaspoons salt, divided
  3. 1⁄2 cup half-and-half
  4. 1⁄4 cup butter, melted
  5. 1 1⁄2 teaspoons jarred roasted minced garlic
  6. 1⁄2 cup sour cream
Instructions
  1. In a stockpot, place potatoes, and add cold water to cover by 1 inch; stir in 3 teaspoons salt. Bring to a boil; reduce heat to medium, and simmer for 10 minutes or until potatoes are tender. Drain well, and return to pan.
  2. In a small microwave-safe bowl, microwave half-and-half on HIGH for 20 seconds or until warm. Add half-and-half, butter, garlic, and remaining 1 teaspoon salt to potatoes. Mash with a potato masher until almost combined. Add sour cream, and mash to desired consistency.
