Caramelized Onion–Parmesan Yeast Rolls

Ingredients
  1. 2 tablespoons vegetable oil, divided
  2. 3 cups chopped onion
  3. 1 (16-ounce) box hot roll mix*
  4. 1/2 cup grated fresh Parmesan cheese
  5. 1/4 cup butter, melted
Instructions
  1. In a large skillet, heat oil over medium-high heat. Add onion, and cook, stirring occasionally, until lightly browned, about 3 minutes. Reduce heat to medium-low; cover and cook, stirring occasionally, until tender and deep golden brown, about 25 minutes. Add 1 tablespoon water occasionally, if needed, to prevent onions from sticking to pan. Remove from heat, and let cool completely.
  2. Spray 13x9-inch baking pan with cooking spray.
  3. Prepare roll mix according to package directions for rolls. Turn dough out onto a lightly floured surface, and knead until smooth, about 5 minutes. Sprinkle with flour to reduce stickiness.
  4. On a lightly floured surface, roll dough into a 15x10-inch rectangle. Spread onions onto dough, and sprinkle with cheese. Starting at one long side, roll up dough, jelly roll style, into a log, and pinch seam to seal. Using a serrated knife, cut log into 1-inch-thick slices. Place rolls 1 inch apart in prepared pan. Cover and let rise in a warm, draft-free place (85°) until doubled in size, about 30 minutes.
  5. Preheat oven to 350°.
  6. Bake, uncovered, until golden brown, about 20 minutes. Brush with butter, and serve immediately.
