Banana Nut Muffins

Ingredients
  1. 2 cups all-purpose flour
  2. 1 cup sugar
  3. 1 teaspoon baking soda
  4. 1/2 teaspoon baking powder
  5. 1/2 teaspoon ground cinnamon
  6. 1/4 teaspoon salt
  7. 1 cup mashed ripe banana
  8. 1/2 cup vegetable oil
  9. 2 large eggs
  10. 2 tablespoons milk
  11. 1 cup chopped pecans
Instructions
  1. Preheat oven to 400°. Spray 15 muffin cups with baking spray with flour.
  2. In a large bowl, whisk together flour and next 5 ingredients. In a medium bowl, whisk together banana and next 3 ingredients. Stir banana mixture into flour mixture just until combined. Stir in pecans. Spoon batter into prepared cups.
  3. Bake for 12 to 15 minutes or until golden brown. Let cool in pan for 5 minutes. Remove from pans, and let cool completely on wire racks.
